We planted our first real garden this year and our parsley EXPLODED!! 🌿💥 So I gave some to my folks, froze the stems for future use, and blitzed a full cup into a tasty lemon-pepper parsley pesto (inspired by @freshfoodbites) to marinate and serve with grilled pork tenderloin. Tonight’s side: decadent, yet low carb cauliflower mac & cheese (inspired by @ketofocus). 🥘

Showing some love to my Mighty Monster Cookies today. ❤️ My favorite little sous chef helped me make a batch yesterday to take to Scouts (hello healthy snack badge!) and he was proud to report afterwards that, “everyone snarfed them down!” 😋

I know I can cram more goodness into these handheld dreams, so I’m not done #tayloring them yet, but in their current state, I gotta say they’re not too shabby: 4g of protein PER cookie, collagen, fiber, antioxidants, omega 3s, no shortage of texture, and completely “snarfable,” apparently. 😉
